Rice cereal has never been my favorite food, however leftover rice warmed with milk and brown sugar has long been a favorite breakfast for my children. When I saw this recipe in Everyday Food, I knew that my boys would love it. What I didn’t know was that I would think it was delicious as well!
I’ll go ahead and mention here that we rarely eat brown rice. (I made a pot of it a few nights ago, just so that I could try this recipe the next morning.) I adore Jasmine rice and nothing else even comes close in my opinion. However, this brown rice? I could eat this combination every day. It was just barely chewy, with a nutty flavor in addition to being sweet and softened from simmering in the milk. Topped with raisins and nuts, this was a hit with all the kids.
Hot Brown Rice Cereal with Almonds and Golden Raisins
recipe barely adapted from Everyday Food
3 cups cooked brown rice
2 cups milk
Scant 1/4 cup maple syrup
Dash of nutmeg
3/4 cup sliced almonds
1 cup golden raisins
In a medium pot, combine the rice, milk, syrup and nutmeg. Bring to a boil and then reduce heat to medium. Cook, stirring continuously for about 3-4 minutes or until slightly thickened. Divide between 3-4 bowls and top with the almonds and raisins. Enjoy!
